These are great midday when the kids are hungry after school, or when you need a midnight snack. Quick and delicious, they won't weigh you down.
2 English muffins, split in half and lightly toasted
Any of the following toppings:
Goat Cheese and Sun-dried Tomato Muffins
3 to 4 tablespoons Goat Cheese Log with Sun-dried Tomatoes and Basil
(from book) or 2 ounces soft goat cheese
2 tablespoons sun-dried tomatoes, packed in oil, drained, and chopped
1 tablespoon chopped basil or 1/2 teaspoon dried basil
Cream Cheese, Tomato, and Red Onion Muffins
2 tablespoons cream cheese
2 thin slices tomato
3 thin slices red onion
Pizza Muffins
2 tablespoons prepared pizza or spaghetti sauce
1/4 cup shredded mozzarella cheese
Salt, pepper, and garlic powder to taste
Tuna Melt Muffins
1 cup tuna fish salad
1/4 cup shredded cheddar cheese
1. Spread or layer the toppings on the muffins in the order listed.
2. Broil 1 to 2 minutes, until edges are golden brown and the toppings are warm.
