Makes about 30
10 slices white sandwich bread
Olive oil, for brushing
4 oz (125 g) freshly grated parmesan cheese
Sea salt to taste
Preheat oven to 400 degrees F. (200 degrees C/Gas 6). Using 2-inch (5-cm) star and heart cookie (pastry) cutters, press out shapes in each slice of bread. Brush one side with olive oil and place shapes, oiled side up, on a parchment-lined (baking paper-lined) baking sheet. Spoon grated parmesan onto oiled side of bread, covering bread as well as possible, then sprinkle with sea salt.
Cook in preheated oven until golden, 7-10 minutes. Keep an eye on the shapes while they bake, as they can burn very quickly.
Serve hot, warm, or at room temperature.

Can be stored for 2 days in an airtight container, or frozen for up to 1 month.
