Dad's Favorite Turkey Marinade

Makes 2-1/2 cups

Can be used for a whole grilled turkey or approximately 10-15 pounds of pieces.

  • 1-1/2 cups white wine
  • 1-1/2 teaspoons fennel or anise seed—crushed
  • 2-1/2 teaspoons brown sugar
  • 1 clove garlic—crushed
  • 2 teaspoons soy sauce
  • 1/2 teaspoon black pepper
  • 5 teaspoons lemon juice
  • 1/2 cup oil
  • 1 teaspoon salt
  • 3 scallions—chopped
  • 1 pinch nutmeg —(optional)

Mix all ingredients, other than scallions, in blender or food processor. Process for 2 minutes. Add scallions and pour over turkey. Refrigerate several hours or overnight before grilling.
