Fried Halloumi Cheese: Two Ways

Serves 4

Halloumi cheese from Cyprus has the amazing ability to be grilled or fried without melting. Cook the halloumi just long enough to give it a luscious, golden crust.

12 oz. halloumi cheese
2 tablespoons all-purpose flour, seasoned with salt and pepper
2 tablespoons olive oil

1. Pat the cheese dry with paper towels. Slice it into eight pieces. Dredge the slices in seasoned flour.

2. Heat the oil in a skillet over medium heat. When the oil is very hot, carefully add the cheese slices to the skillet. Cook each slice about one minute on each side, or until they become golden brown.

Variation: Omit the flour and fry the cheese slices in a hot nonstick pan until golden on each side.

Serving Suggestion: Serve the slices on a bed of leafy salads with a tart vinaigrette dressing, garnished with capers. Figs and balsamic vinegar also make a tasty combination with fried halloumi slices.
