Specialty Spice Mixes

 

Spice mixes make a nice gift especially because store bought are expensive. The basic combinations can be altered to reflect your personal tastes or those of your intended recipient.

Cajun Spice Mix

  • 1- 1/8 cup sweet paprika
  • 1/4 cup cayenne
  • 1/4 cup freshly ground black pepper
  • 2 Tbs. thyme leaves
  • 2 Tbs. oregano
  • 2 Tbs. onion powder
  • 1 Tbs. celery seed
  • 1-1/2 tsp. garlic powder

Grind all ingredients in blender or food processor. Store in an airtight container away from heat. Makes 2 cups.

 

Dry Rib Rub

  • 6 tsp. salt
  • 1 tsp. dried lemon powder
  • 6 tsp. sugar
  • 1 tsp. paprika
  • 1/2 tsp. dried mint
  • 2-1/2 tsp. black pepper

Mix all together and store in air tight container.

 

Chinese Five-Spice Powder

  • 2 Tbs. whole black peppercorns
  • 36 whole cloves
  • 12 inches of stick cinnamon
  • 2 Tbs. fennel seed
  • 12 whole star anise

Put spices together into a blender and pulverize into a powder. Store in a cool place in an air-tight container. Source: Colorado Cache Cookbook

 

Herb & Garlic Blend

Recipe By Beef Industry Council

  • 1 Tbs. dried basil
  • 1 Tbs. dried marjoram
  • 2 tsp. garlic powder
  • 2 tsp. dried thyme
  • 1 tsp. dried rosemary—crushed
  • 3/4 tsp. dried oregano

Combine all ingredients and store in airtight container. Shake before using. Sprinkle atop salads, steaks, vegetables and in soups.
