

Jimmy Schmidt puts his philosophy to work outside of the restaurant and book world as the Chairman of Chefs Collaborative: 2000. with Chefs Collaborative, Schmidt works with fellow culinary stars Jacques Pepin, Wolfgang Puck, and Mark Miller to promote their belief in "personal health, the vitality of cultures, and the integrity of the global environment." These chefs work globally by producing educational videos for kids teaching sustainable food choices, and locally by buying and serving seasonal and local cuisine in their restaurants.
Schmidt has recently released another book, Heart Healthy Cooking for All Seasons, written with Alice Waters and Larry Forgione (Pocket Books, 1996). His previous book was Cooking for All Seasons (MacMillan, 1991). He is the recipient of the prestigious James Beard Award for Best Regional Chef of the Midwest, 1993. Both he and his restaurants have received numerous awards and accolades from publications such as Food & Wine, Esquire, Wine Spectator, Bon Apettit, Cook's Magazine, and The Christian Science Monitor, to name only a few.
A native Midwesterner, Schmidt
opened his first restaurant in Denver, Colorado in 1985. That
restaurant was The Rattlesnake Club, and since
then Schmidt has opened a second Rattlesnake in Detroit, three
other restaurants in the Detroit area (Chianti Villa Italia,
Chianti Villa Lago, and Stelline), and a Rattlesnake Grill in the
Denver area.
