Irish Moss

 

A seaweed that grows abundantly in the North Atlantic. Irish moss is a yellow-green, brown or purple seaweed. It is only edible after cooking. A viscous polysaccharide, called carrageen, is extracted from it (a gelling agent). It is used in the food industry as a stabilizer, thickener and gelling agent in the manufacture of ice creams, sorbets, cheeses, evaporated milk, instant soups, cakes, cookies and sweets.

Serving Ideas

Irish moss is added to soups and simmered dishes or used as a vegetable.
