Tasting Notes

 

Cheese Parcels

Ingredients:
9 oz. Frozen or fresh puff pastry
9 oz. Ripe cheese (Camembert, Brie, goat cheese, etc.)
Fresh herbs of choice
1 Egg
Vegetable oil for greasing

Preparation:
Heat the oven to 425 degrees F. Thaw the puff pastry (if necessary). Grease a baking pan or sheet with oil. Roll out the pastry on a lightly floured work surface into a square 1/8-inch thick. Cut the pastry into 4 equal squares. Cut the cheese into quarters and Place one piece, together with the herbs, in the center of each pastry square. Fold the pastry, enclosing the cheeses and pinch the edges well to seal them. Beat the egg and brush over each parcel. Transfer the cheese parcels to the greased baking sheet or pan. Bake in the oven for 20-25 minutes. Serve hot with green salad and vinaigrette, or with pickled green almonds.
