Though the Middle East has many specific regional and national cuisines, one item ties them all together: aromatic spices. Middle Eastern cooking also features many ingredients in common, like pita, honey, sesame seeds, sumac, chickpeas, mint and parsley.
While most Destination pages in the Global Gourmet are categorized by individual nation, some countries in an entire region have similar cuisines. For this reason we examine the Middle East as a whole—at least from a culinary standpoint. Middle Eastern cuisine includes Egypt, Syria, Iran, Iraq, Lebanon, Jordan, Saudi Arabia, Israel, along with the nations of Afghanistan, Kuwait, Yemen, Armenia and others.
