the appetizer:

The Caribbean includes islands and countries as diverse as Cuba, Curacao, Dominica, Dominican Republic, French Antilles, Guadeloupe and Martinique, Haiti, Jamaica, Trinidad and Tobago, and The Virgin Islands. Common foods like seafood, chicken and coconut, as well as recipes like jerk and callaloo, unite these islands into a heterogeneous culinary paradise.

Cucumber Salad

2 large cucumbers, peeled
1 teaspoon salt
1 small chile pepper, seeded, minced
2 teaspoons lime juice
1 garlic clove, minced

Slice the cucumbers lengthwise and remove seeds with a melon baller or spoon. Slice each half into 1/2 inch pieces. Place them in a bowl and sprinkle on the salt. Toss gently and let sit for 30 minutes. Drain well.

Place the cucumbers in a serving bowl and add the chilies, lime juice, and garlic. Toss well. Cover and let salad sit at room temperature for 1 hour before serving.
