the appetizer:

Brazil's culinary influences include not only Amerindian and Portuguese foods, but the cooking styles of immigrants from many other parts of Europe, Africa, the Middle East, and Asia. Each of the country's five geographic regions offer cuisines that are distinctly different yet recognizably Brazilian.

Caipirinha
(brandy cocktail named "little peasant girl")

Serves 1

1 lime, quartered
1 to 2 tablespoons sugar
2 ounces cachaca*
Ice cubes

Mash the lime quarters in a cocktail glass with a wooden pestle. Do not remove the pieces of crushed lime. Add the sugar and cachaca. Fill the glass with ice cubes and stir well.

*Cachaca is available in the United States in metropolitan liquor stores and in some Brazilian specialty food stores.
